Who says eating healthy is too expensive? It can be time consuming but not with my crock pot! I love that thing!
My favorite section in the meat department is the “Discount Meat” section. In most cases the meat is near expiration and the store is looking to get rid of it. As long as you cook or freeze this meat right away it is perfectly safe and tastes great! I stock up every time they’re selling what we like. I recently found 1.5lbs of Foster Farms Boneless skinless chicken breasts at my local Safeway store. They were regularly $8.21 or $5.39 per lb YIKES!!! . I grabbed them for $5.29 which still is high for me considering that’s still over $3 per lb.
I found an easy crock pot recipe for Chicken Cacciatore on allrecipes.com and decided to give it a try.
Boneless skinless chicken breast $5.29
Onion - $.25
Green Bell Pepper - $.68
Red Bell Pepper - $98
Mushrooms - $1.00
Spaghetti Sauce - $.69 (I grabbed these Hunts Spaghetti sauces last year at Fred Meyer, used a store coupon and a manufacturers coupon to get 10 cans. Great find!)
Throw it all in the crock pot. I put the peppers on the top so they didn’t lose their color. Leave it for 7-9hours! Serve it up over your favorite pasta or at our house its brown rice.
